In Thursday’s (2/14) Grand Rapids Press (Michigan), Jeffrey Kaczmarczyk writes, “Grand Rapids’ 1913 Room, a celebrated restaurant in the Amway Grand Plaza Hotel, is gone, but its coveted recipe for Dover Sole has not been forgotten. You can find it in the Grand Rapids Symphony’s ‘Encore!’ a cookbook as well as a coffee table book celebrating arts, life and food in Grand Rapids. … The Grand Rapids Symphony Women’s Committee organized the project as a fundraiser for the orchestra as well as to illustrate Grand Rapids and its fine and performing arts, museums, festivals and architecture. … Many [recipes] were submitted by musicians and supporters of the Grand Rapids Symphony who aren’t professionals, at least not in the kitchen. … Proceeds from the sale of the book, which retails for $30, will support the orchestra and its educational programs. The Grand Rapids Symphony’s Women’s Committee spent 18 months working on the 200-page book, beginning with some 600 recipes narrowed down to less than 200.”
